What would Christmas be without cookies? But above all: What would Christmas be without vanilla croissants? For me, vanilla crescents are the Christmas cookie classics par excellence. Crunchy, deliciously vanilla-scented and rolled in icing sugar - that's how I like them best. So that there are still enough cookies left in the tins for Advent and after Christmas, I usually bake several trays of my favourite cookies at once. If you feel the same way, I have the right recipe for you today! For all you vanilla cookie fans, here's a vanilla cookie mousse with white chocolate, layered in a glass and with an extra serving of vanilla cookies on top. The perfect dessert for the coming Christmas holidays, New Year's Eve or New Year!

If you have baked too many cookies than you can eat, the vanilla wafer mousse is also ideal to use leftover vanilla wafer.

THIS IS NEEDED FOR 4 SERVINGS:

  • 250 ml whipped cream
  • 100 g white couverture or white chocolate
  • 8 vanilla crescents
  • 3 tablespoons yoghurt

AND SO IT GOES:

Whip the cream in a bowl until stiff. Melt the white couverture over boiling water in a bain-marie. Crumble the vanilla crescents and set aside.

Mix the melted couverture with yoghurt and half of the crumbled vanilla crescents. Now carefully fold the whipped cream into the yoghurt and couverture cream with a whisk. Pour the ready-mixed cream into glasses and layer alternately with cream and the remaining vanilla crescent crumbs.

Now chill the vanilla crescent mousse in the refrigerator and serve.

MERRY CHRISTMAS - BE WELL!
